Naast zoet/zuur/zout/bitter heb je een vijfde basissmaak — umami — pas erkend in 2002. Ontdekt in 1908 door Japanse chemicus Kikunae Ikeda toen hij dashi-bouillon analyseerde. De smaak komt van glutamaat — vooral hoog in MSG, sojasaus, parmezaan en tomaten. "Umami" is Japans voor "heerlijk".

Besides sweet/sour/salty/bitter you have a fifth basic taste — umami — only officially recognised in 2002. Discovered in 1908 by Japanese chemist Kikunae Ikeda while analysing dashi broth. The taste comes from glutamate — especially high in MSG, soy sauce, parmesan and tomatoes. "Umami" is Japanese for "delicious".
