Béchamel is een van de vijf "moedersauzen" van de Franse keuken (samen met velouté, espagnole, hollandaise en tomaat). Hij werd in de 17e eeuw genoemd naar Louis de Béchameil, een hoveling van Lodewijk XIV — al was de saus zelf waarschijnlijk eerder bedacht.
